summer sweetcorn, lime & cucumber slaw recipe

Hellooo from the lovely Sydders, I’ve been for a very gorgeous walk this morning with Barls and am trying to recover from how hot it was !
I came across this recipe for a Summer Slaw on one of those free flyers popped in your bag at the greengrocer’s, it was for ‘slaw’ (have you noticed how ‘slaw’ is trendy?)…it looked really delicious and it went in the back of my mind to try…of course, that didn’t happen for a while…but recently with this heat, I’ve been looking for simple things to eat with grilled chicken or fish which don’t take much work, are healthy and, most importantly, you don’t have to cook.
So I popped the recipe ingredients on my list and shopped for it and didn’t think much more of it…but once I got into the kitchen to make it I was thinking there isn’t much in this actually, how is this going to taste much of anything…and it didn’t…so I had to add a few extras to make it taste good and this is the result…really nice and fresh and summery….the combo of the mint and the lime with the sweetcorn works – I reckon if you eat it in the depths of a dark winter, assuming you are happy to pay for out of season cucumbers it might give you some cheer and if you are outside on your patio in summer it’s delicious with chicken and jacket potatoes…also, like all things that make it to this corner of the web, it’s super easy but looks like it’s a bit special..who doesn’t like that?
Summer Slaw – Sweetcorn, Lime & Cucumber Salad Recipe
1/2 white cabbage shredded very finely
1 bunch mint torn
1 lebanese cucumber chopped
juice of 1 lime
1/2 to 1 small can sweetcorn or fresh corn cooked
2 -3 heaped tbsp mayonnaise
1. add all ingredients to a bowl and mix well, salt and pepper to taste.

Rightio, I am off to do some work, I’m making this in the slow cooker as it’s lovely, the kiddos love it and it means I won’t be doing any slaving over any kind of heat at any time today…
