Right, beach cottage ladies, these are really really really good muffins and this is an excellent muffin recipe…if you like an overly sweet muffin this is not for you, this is in my head an oh-no-I-haven’t-eaten-breakfast-again-and-now-it’s-mid-morning-and-I’m-gnawing-a-rustic-table-kinda muffin.  Yes they do exist.  Being not massively full of sugar, you can just about eat these with your morning coffee and not feel too guilty that the other kinda muffin (over waistband) is not expanding rapidly with each bite.

There are two other amazing qualities of these muffins, firstly they are incredibly easy, secondly they were made by my gorgeous daughter and therefore for me extremely easy and oh yes actually there is a third thing, they freeze quite nicely…



Banana and Coconut Muffins

2 cups plain flour

3/4 cup sugar

1/2 cup shredded coconut

2 tsp baking powder

2 eggs

1 cup sour cream

1 tsp vanilla extract

1/3 cup vegetable oil

1/2 cup mashed banana

1. add all ingredients to a mixing bowl and stir

2. pop into muffin cases and bake for 25 to 30 mins at 180C.



If you like a good breakfast muffin, these are definitely worth a try…

    Sounds yummy, thanks Sarah for sharing. Just printed it out and will maybe bake them this afternoon.
    I had my very best breakfast muffins in a B&B in New England. They were made with oatmeal, carrots and brown sugar and also not too sweet.
