Good morning lovely beach cottage ladies, how are you?

Well I am here today with another lovely recipe for Winter…a soup recipe that I love, though to be quite honest it doesn’t need to be Winter for me to eat soup, apart from probably the hottest few weeks of the year here, when to be quite frank soup is the last thing you want to eat, it’s on the menu all year…

There is nothing like having a pot of soup around – warming, welcoming and just kinda homey and happy and to tell the truth I love it if it’s been hanging around for a day or so – nice long melded flavours, always does the trick for all of us…

In the home I like food to be simple, healthy and it needs to be easy to cook and as I said before in this new adventure of ours (some of which I would not like to experience again) there has been a serious upside to moving here and that is having gas to use when cooking easy family friendly meals…using a gas stove again, after years without one is brilliant – super easy, complete control for the temperature and right there in an instant.

I’m loving the hot water too, you know that bathroom I’ve been talking about, the fact that I haven’t had a bath for a zillion months, you know the headaches we’ve had, you know the knocking down of walls, building of new ones, the dust and lots of white…there is all that but also there will be a big old clawfoot tub for me soon and I will have the pleasure of sinking into it with nice long hot continuous water heated by the luxury of our gas….mmm…trust me that hot water is gold in my life…

The main thing though is the cooking with gas I’m loving (and bbq, though I’m not very talented in this department, but having instant gas outside is too easy, oh and more efficient to hook up a few different things)…to be quite honest I love being able to instantly turn up the heat high in the beginning of a dish (very accurate) to get it all going, and then down to a teeny flame to let it simmer all day….

This soup then is one that likes to sit on that gas stove all day and does it very well….this is a soup made with healthy vegetables, tomato, carrot, celery, onion, flavoured with garlic and includes quinoa (we all need that right?)…

Tomato, Vegetable and Quinoa Soup Recipe

1 large onion finely chopped

2 cloves garlic chopped

3 sticks celery chopped

1 large tin diced tomatoes

2 carrots finely chopped

1 large handful garden herbs (I used thyme, parsley, oregano)

1 scant tsp turmeric

6 cups stock

salt and pepper

2/3 cup quinoa rinsed

1 tbsp olive oil

juice from half a lemon

  1. heat oil & add onion, garlic, celery, carrot
  2. cook 4 to 5 minutes until softened
  3. add, stock, quinoa, turmeric, lemon, salt & pepper, herbs
  4. simmer 30 mins or so

Enjoy!  Serve with lovely bread, some shaved parmesan and, if you like, a drop of oil.
