slow cooker crock pot turkey lettuce wraps

Hellooo lovely beach cottage ladies, well I am sharing a crock pot slow cooker recipe today, a recipe that knocked the whole of our socks off in this old place – this is a recipe for minced turkey lettuce wraps and it is da bomb. I have to tell you we have been living out of our slow cooker, as you know I use it a lot anyway, but without an oven she’s been working her little butt off while I am painting or tidying or cleaning.
Mostly I have been using my fall-back recipes in the slow cooker, those I have collected over the years, that I can throw in with my eyes shut and never ever let me down (you can find the recipes for some of my fave crockpot cooking here), but over the last week or so and just before I ordered a new oven (man I cannot wait, nor can anyone else here wait to get back to our Sunday Roasts), I found a few new recipes to try out in the slow cooker – this is one of them and it rocks.
I have been using my crock pot for 12 years or so now at least a couple of times a week, mostly more…after the first few initial months of learning I started looking for recipes that moved past the 3 ingredient ones (one of those ingredients normally being a can of soup) and started to experiment with the dishes I cooked regularly adapted for the slow cooker – I wasn’t keen on using ready-made products full of additives and e-numbers (i.e. a lot of recipes you see for the crockpot are basically meat with a jar of ready-made sauce over it), I thought it defeated the point. I have to say though there is a place in my life for a chicken casserole whereby one slings in a few breasts of chicken, a punnet of mushrooms, a lug or 65 of white wine and a tin of condensed soup – those are the days when we are all out of the house leaving here early, I have no care really what is for dinner but know at the end of a long day to walk in to something already done and dusted will save a whole lot of aggro – and it works every single time.
Yes so anyway, moving back to the recipe searches lately, I found myself on Pinterest and boy oh boy are there some crock pot recipes on there, what on earth did we do before Pinterest and the internet? I zooshed around on there for a bit, quickly by-passing the ‘best roast in the world ever’ recipes and the recipes for chicken with a jar of salsa over it and found 5 new recipes to try for the week…some have been not so good, some have been awesome (will blog soon).
This one was for minced chicken with a jar of ready-made Asian style ginger sauce over it – I took the idea and ran with it, but losing the jar, not really expecting it to be good. I subbed turkey for chicken and threw in garlic and ginger and a few other bits and bobs… I made a huge batch of it, expecting there to be leftovers for salads in lunch boxes…there was a small bowl left…always a good sign in this house that something is good when the whole lot is gone.
Normally for this little corner of the web for recipes I will test 3 times or so just to make sure I have done everything right, because I am a slapdash cook who throws things in willy nilly…this has only been made once in this old cottage, so if you make it do so at your own risk ;) but to be quite honest, it’s so straight-forward you can’t really get it wrong and I was noting down in my phone the things I was throwing in along the way…
Easy Crock Pot Slow Cooker Turkey Lettuce Wraps
(serves 6 – I was serving 4 teenagers whose appetites are far from small plus myself and Mr BC so adapt if you need to)
1.5kg turkey mince
3 medium onions finely chopped
1 to 2 tsp dried chilli flakes (I used over 2 tsp but we like things spicy)
3 large cloves garlic finely chopped
4 cm piece ginger finely chopped
juice from half a large lemon
4 tbsp Franks Hot Sauce (or similar hot pepper sauce)
generous salt & pepper
1/2 cup stock or 3 cubes and a half cup water
2 cups uncooked rice cooked
2 little gem lettuces
1 bunch spring onions
1. throw all ingredients in slow cooker and leave on high for 4 to 5 hours, all day on low.
2. check the liquid level 30 mins or so before you want to eat – if too much liquid leave the lid ajar and cook on high.
3. arrange generous layer of lettuce leaves on plate and serve turkey and rice on the top
Oh and if you are low-carbing aka endeavouring to lose muffin-top or the fat partay that just so happens to be hanging out on the tops of your arms, without the rice this is one tasty low-carb recipe after which you are not still so hungry that the new table you found on the side of the road on the way home from swimming practice is looking particularly attractive if you take a bite out of it.
OK, I am out of here, I have a bathroom to plan, actually I have two bathrooms to plan and the work is starting this week…I cannot tell you how much I need a bathtub right now.
