Recipe Easy Spicy Red Lentil Soup

Helloooooo, a recipe for today, a very budget friendly, body friendly, domestic goddess friendly spicy red lentil soup recipe.
Oh my we are having amazing Spring weather here in Sydney for the first few days of the holidays, I have been pottering in the garden today, there are some lovely things appearing and sweet peas flourishing (!), and I have been on Operation Spring Clean and in that I mean spring cleaning body and house ;)
If you follow me on Instagram you will know that yesterday was a 8km walk and another one is coming up for me later and I have signed myself up for a 55km hike in the New Year, nothing like 55k to scare one into getting their fitness back. I am ready and waiting for Summer and the muffin top ain’t in any shape or form, coming with me. I have other ‘wellbeing’ things on the go too – one of which has lasted a month now and with good results already, I am going to post what I have been doing soon as I know lots of us are getting ready for Christmas or Summer and if you are lucky enough to be in the Southern Hemisphere that would be getting ready for both – sometimes this is rather cruel I feel, all the goodies of Christmas to indulge in while at the same time as breathing in and up and bravely adorning a bikini.
So how does this lead to soup and soup recipes? Well I firmly believe in soup for the removal of muffins, tuck shops or any other things that one wants to lose really….soup really works for me in so many ways. If I have bored you before on this, apologies, but a pot of soup does wonders for me – it’s cheap, it’s easy, it’s healthy, it’s filling, it’s pretty much low cal and lastly I like it heaps.
This one comes from that same plastic sleeve I was talking about that I found in the back of the junk (that is no more) drawer – the original poster from all those years ago writes ‘this is my go-to soup, few handfuls of lentils, a sweet potato, garlic an onion or two and lots of spices, cumin, mustard seeds etc, can of coconut milk, throw it all in, a big squeeze of lemon juice, handful of peas and greens, then blend’
Hmm, ok pretty easy, I tried this a few times and I lost the handful of peas and greens but what attracted me to it was the spicy bit and with the mix of spices I boiled this down to after a few tries it’s a warming, tasty and easy mix and is really good for filling you up if you are trying to be a goddess of your inner temple. Plus there’s not too much faffing, the key to me to a healthy lunch is that it won’t take me oodles of time and it won’t mean I will have to find all sorts of exotic ingredients…
Also it keeps really nicely in the fridge…
Very Easy Spicy Lentil Soup
1 large onion chopped
1 sweet potato diced (optional if you haven’t got one hanging around)
1 can coconut milk (light if you are hoping to lose those things we mentioned above tho I don’t do light)
1 cup (about 3 handfuls) red lentils
salt & pepper
5 cups stock
1 tsp chilli flakes
1 tsp cumin, mustard seeds, turmeric (all optional and interchangeable)
1. add onion to pan in a bit of oil until softened
2. add all other ingredients and simmer for an hour or more
3. blend and serve
This is part of Beach Cottage Soup Series (and there are lots more to come) – my favourite so far from the little plastic sleeve in the back of the drawer is Courgette (so good), it’s easy, very healthy and cheap (recipe is here if you missed it) and if you are reading this from somewhere in the Northern Hemisphere and getting chillier this recipe is a blinder, but really, the best soup ever has to be Pea & Parmesan, it will rock your soup world xo.
