Easy Recipe Courgette Zucchini Soup

Well I know for some of you who are reading this you are just getting ready for cooler weather and soup recipe time, Courgette Soup time in this case, but here in Sydney we are warming up, hooray, but for me I eat soup all year round anyway (unless it’s totally like 44C boiling hot), I just love how simple, easy and quick (or indeed slow) soup is…and how easy it is to be healthy…I dress it up most of the time for those who think soup is not a meal and call it stew…I’m so crafty like that.
So anyway a few weeks ago I was clearing out the junk drawer (as part of House Cleanse to turn myself into superior domestic goddess with clean and tidy home/life/inner thigh) and I came across one of those clear plastic sleeves, it was rammed full of recipes, most of them printed out, some of them handwritten and some clipped from magazines (I love these little gatherings of recipes and I am ALWAYS on the lookout for them while thrifting) …I love this sleeve, and it migrated with us to this new land…the sleeve goes back to the days when I was first getting into my slow cooker, when the internet was in the very early days (at least in England where I lived at the time) and I was dabbling with putting dinner on in the middle of the day and amazed how it changed my life come Arsenic Hour in the evening with a baby who screamed pretty much from 4pm for a good few hours. Just, you know, to make the whole 3rd baby thing a bit pleasant ;)
In this sleeve there are a whole load of things I haven’t made for a long time and I was nodding going oh yes I must make that again, and oh yeah that was a good idea…there were a few things I liked the look of and a few that are now in high rotation and I make with my eyes shut…a few new things too, like a noodle thing you add eggs to and it makes a great thing for lunch boxes and this soup….most of the printed out recipes in this sleeve are from an old forum I belonged to that is now sadly defunct and was all about regular cooks sharing regular real food – no fussing, no fancy pictures (though man do I like that part of it now lol) and often no measurements just, you know, take a couple of carrots, add this, add that and voila dinner is done.
This is one of those printed out recipes and below you can see it’s more of an instruction, an idea to play with, take it and work with it…
this is how the ‘recipe’ was written:-
‘I make an easy courgette soup – boil courgettes, add spring onions, red onion and some herbs, stock and boil until mushy. Blend and add cream. It’s delicious’
I liked the sound of this (though not the mushy bit really) and I cannot remember if I ever did make it back then, there are little rumblings back there somewhere in the brain that say I did and we loved it…but who knows if I did make it then….its memory is somewhere lost among the colic screaming I reckon…
So I have now made this a few times to blog (I always have to do recipes for here a few times because firstly I always throw things in and never remember what they were and secondly I think if I am throwing this out there to you lovely people I want to see if it’s a little bit consistently as good each time).
Here we go then…trust me this is a keeper, I am well aware it kinda even sounds a bit not nice. Do you think that? Maybe it’s just me, but Courgette Soup wasn’t always going to be top of my list to make or try or dabble with. That’s changed ;)
Courgette / Zucchine Soup Recipe
(slow cooker friendly recipe)
5 courgettes aka zucchini
3 spring onions (if you have them if not go 2 onions)
2 cloves garlic
dash of vinegar (i.e. throw in a lug of vinegar)
salt & pepper ( I like lots of pepper)
2 tbsp sour cream (or cream or creme fraiche)
a good handful of thyme & parsley (I used fresh b/c it’s growing well out there, dried will do)
4 cups chicken stock (I used a carton b/c no fresh in the house, obviously a cube works)
1. sweat onion, garlic and courgette in a pan in a little oil
2. add stock, salt and pepper, vinegar, thyme and parsley to pan
3. simmer on low for 20 mins or a few hours very low
4. towards the end of cooking time stir in the sour cream
slow cooker instructions
if you are making this in your slow cooker just throw the whole lot except the cream in and leave it on low for 4 hours or so – just keep a check on the liquid
Serve with crusty bread and lots of cheese if you like – or any topping that you love goes down well on this, but really this is quite delicious on its very little own-some.
If you are new to soup making this is a really good one to start with, you can’t really get it wrong…and there are few ingredients…but, with still good results.
In that plastic sleeve I found lots of other easy soup recipes I had tried / used to make – funny how you forget things, isn’t it? Anyway I am going to cook my way through them and I’ll blog them if they are nice …. a Beach Cottage Soup Series methinks.

p.s this soup over here has been really popular on this little corner of the web – I believe it’s because it’s so tasty and easy, another one that’s crock pot friendly and has few ingredients…love that.
