Easy One Bowl Chocolate Cake Recipe for Easter

Hellooo, would you look at that lovely little chocolate cake up there, do you need an easy one-bowl cake recipe in your life well I can help.
I love Easter, I always have and I’ve always gone rather OTT on the whole chocolate thing especially once I had kiddos and every single year since we had Honeymoon Baby I’ve bought pounds of chocolate eggs and we’ve hidden them around the garden on Easter morning, along with painted bunny prints. No doubt my children once believed the Easter bunny was extremely generous.
I love these celebrations and traditions and I love how food works into these, how traditions and food mark occasions in our life – like Christmas for me wherever I am in the world will always be turkey, like Easter will mean little shiny silver eggs in the flower beds and chocolate cake.
So yes, Easter Cake will be in the house soon – I think that generally people love a cake, even if they don’t like cake if you see what I mean – there is something about cake baking…whatever it is, from the walking into the kitchen, the foofing with the mixing bowls and measuring, the oven whirring and the smell as it bakes…it’s just nice in these days in the world that we live in, and seems to automatically slow everyone down…and I don’t know, for me anyway, means family and home and calm.
However, I am not a natural baker, I’ve written that before on this blog, but I do like home-baked goods and to that end I have had to learn …so I am certainly not a brilliant cake maker, but I do like to be able to pull out a cake especially on occasions…and so not being born with the natural skill to whip up masterpieces without any trouble, I have found ways to easy bake, which for me means, in other words, throw it in a bowl and mix it up without any fuss.
I suppose this then is just a very plain and simple chocolate cake and that it is, but come Easter time I anoint it with chocolate eggs and voila it somehow goes from ordinary to rather fab but without much effort. My kinda baking.
Over the years, with two rather large and even more serious cake eaters in this old cottage I have tried my hand at a few different chocolate cakes…mostly with mediocre offerings…I do not need six different pans for melting chocolate, sifting this, or whisking that…it stresses me out and certainly does not leave me feeling like celebration…to that end I found a recipe years ago that can be thrown together and works every single time and I dress it up for Easter and love how easy it is.
The icing is easy too – quick, one bowl, idiot proof and no melting over pans of water or any of that stuff. To make it special for our Easter celebrations I buy the little eggs and pop them on top, for this I used Woolworths Select eggs (European made chocolate with no artificial stuff and great on the pocket).
Easy Easter Chocolate Cake
1 cup self raising flour
1 cup packed brown sugar
1/3 cup cocoa
100g butter (I used Woolworths Select Tasmanian butter)
½ cup milk
2 tbsp butter softened (I used Woolworths Select Tasmanian Butter)
1 ¼ cups icing sugar
1 tbsp cocoa
2 tbsp boiling water
Chocolate eggs (I used Woolworths Select Milk Chocolate Solid Eggs)
- Pop all the ingredients in a bowl or mixer and mix to a batter
- Bake in the oven on 200C for 40 to 50 minutes
- Add all ingredients to a bowl and mix until smooth (sometimes I find I need an extra tablespoon or so of water), spread on the cake and top with the chocolate eggs
