oooh lovely Beach Cottage ladies, here’s my super easy curry recipe I was talking about the other day, it’s a fab recipe for Vegetarian Curry, this is really easy, budget friendly and packed full of healthy goodies – it includes cauliflower, red lentils, capsicum, chickpeas and courgette (zucchini) and it’s really easy to throw together….

In my dabbling with finding a good veggie curry recipe I found some of them had too many veggies so you were kinda overwhelmed by different flavours – these were then ‘flavoured’ with curry, if you see what I mean…this one, I think, has just the right amount of veggies (though for sure, the veggies for this curry are not set in stone, I’ve also made this with whatever I have had to hand and it’s been lovely too).

I adapted this recipe then from a medley of different sources, Jamie Olive was involved (this curry recipe of Jamie’s is quite nice), and Hugh Fearnley-Wittingstall, also a little bit of advice from Nigel Slater – it’s always good to surround yourself with a few men in your life I reckon.

And then of course I have partaken in a whole lot of internet browsing for Vegetarian curry recipes and let me tell you there is one thing for sure, on the topic of veggie curry there are a lot of variations….a whole lot!

Many recipes for Vegetarian Curry though require quite a lot of faffing in my opinion and fussing with recipes is not something I am interested in – an easy, simple, budget friendly, real girl veggie curry recipe for a meatless monday well yes indeed, love to add that to my repertoire, but not the other kind where you have to buy 65 different vegetables and spend a long time chopping them…

Vegetarian Curry Recipe

Meatless Monday Veggie Curry

 

1/2 large cauliflower cut in small florets

1 cup dried red lentils

1 can chickpeas

1 large courgette sliced

juice of half lemon

1/2 litre stock

1 tbsp vinegar

3 cloves garlic chopped

2 onions chopped

1 tsp curry powder

1/4 tsp cumin

small handful parsley chopped

small piece ginger chopped (thumb sized)

2 long bull peppers

1 red pepper (capsicum) chopped

1 green pepper (capsicum) chopped

 

stove top vegetarian curry recipe

1. add all vegetables to the pan and sweat until onion is soft, about 10 mins

2. add all other ingredients

3. simmer on low for an hour

slow cooker / crock pot veggie curry recipe

1. add all ingredients to the slow cooker and cook on high 2-3 hours (you may need to add less liquid as to the way your slow cooker cooks – always add less and then you can add more if you need to, that’s how I do it anyway x)

beach cottage recipe notes** if you are fussy about the softness of veggies this won’t be for you if you make it in the slow cooker really, ditto if you leave it too long on the stove-top….really I’m not fussy about that, I’m more interested that it’s family friendly in terms of I can throw it all in the pot but it’s still healthy and easy over the veggies maybe being a bit on the soft side …have to say though many recipes I’ve read on this stipulate watching the veggies like a hawk…I reckon though it’s a fine line between getting the veggies full of flavour and mingling and softness…

Well I’ll be off, guess what we’re having for dinner in this old cottage, well that would be vegetarian curry…we’re doing well on our meat free meals (I wrote about how it’s going here if you missed it), sure are looking forward to the roast though!

(ummm just thinking all these veggies and talk of them might mean you want this – a tasty little throw it together slice recipe I worked with Woolworths on, it’s yum, super easy and very nice for afternoon tea, full of honey and nuts and oats)

    Hi Sarah, thanks for the recipe! Becoming a vegetarian has changed my life. I never ate red meat, just chicken & fish. Gave that up and now don’t eat any animal ‘flesh’. I’ve lost 10kg (although losing weight was not my goal, it was just a consequence) & feel better than ever.

    Looks delicious! Curry has so many wonderful health benefits. I can tell a difference after I eat it. I have a love affair with turmeric and its anti-inflammatory properties. Well, my hands have a love affair with turmeric.

    Well this is something I will try without the curry and spices. I am a plain jane organic homemade cook…highly sensitive to spices. But I have been mostly vegetarian for over a year…I still eat eggs, chicken, and some fish. My digestive system is thankful. Beef(and I only ate organic) was causing all kinds of pain. I too like to cook simple, easy peasy recipes so yours are just right for me!

    Somehow, I am guessing when you updated your blog, you fell off of my blog roll. So I am re-adding you. I have missed so many posts!
