Helloo a super easy cookie recipe from me this morning, I have tried lots of new recipes lately, none have really cut the mustard, but this one is good, basic, simple and just a decent no-fail coffee cookie recipe with a little extra hit – via a shot of the black stuff.

This recipe pops a shot of caffeine into your cookie and I am here to tell you these are delicious – as usual with things that call for coffee in them I love using my little Caffitaly machine – pop in a pod and let it do all the work for you.   I’m not a big gadget person but these machines are quick, convenient and affordable, plus the there are lots of different pods to try, so if it’s all too much to walk to the local cafe, you get that cafe taste at home without having to get out of your pj’s and without costing you an arm and a leg ;-)

I came across this recipe sitting in my top drawer in the kitchen, which, ahem, is not the tidiest of places, you know the term ‘junk drawer’ , I have a gold medal in them.  Anyway a little scruffy old cutting from a newspaper was in there the other day when I was trying to find some Sellotape, hmmm this looks good I thought – have to always love a clipping from the old days don’t you?  I’m thinking this must be at least 10 years old since it’s been a very very long time since I’ve cut something from a newspaper.   I tried it out but used butter instead of shortening and less sugar, result rocks.   Best thing is one bowl, one spoon and one easy coffee machine makes for domestic goddess points without any effort.

Gotta love that my friends.

 

Easy Cookie Recipe with Coffee

1/2 cup butter

2/3 cup sugar

2 tbsp strong coffee

1 egg

3/4 cup self-raising flour

1/2 teaspoon vanilla extract

1/2 cup chopped walnuts

 

pop all ingredients in a mixing bowl and mix until well blended

add teaspoonfuls of mixture to a lined and greased cookie sheet

bake 10-12 minutes 200C
