3 Minute Chocolate Ice Cream Sundae

Hi Beach Cottage ladies, this is a gorgeous little dessert ice-cream recipe with a delicious hit of coffee, I love it and have been making a version of this for years.
I first came across this when I worked up in London in a trendy little 4 storey London house with a big black door, iron railings and fenced park in the middle accessible only by key, think Notting Hill and you are there.
On the top floor of this house was a dining room and cooks were employed for client lunches, mostly they were rather nice Chelsea girls who had been to finishing school and could whip up a lovely little lunch from simple ingredients while charging an arm and a leg for it. I may start doing that in this old cottage to the inhabitants.
I was sometimes asked to help with a few bits and bobs and one day there was terrible weather and that day’s chef got caught in traffic and arrived stressy and late, so I helped out with some of the lunch.
I must say I was a bit surprised at how the clever purchasing of ingredients was about all this girl had done in the way of cooking – unwrapping very nice veggies and deli meats and cheeses etc. I can’t remember what the main course was but the dessert was a version of this – ice-cream drizzled with a coffee, chocolate and cream concoction and sprinkled with bits and bobs, I’m pretty sure there were kumquats in there somewhere too…it was the first time I had seen a kumquat, funny really the things you remember, I thought they were the oddest things, now all this time later, on the other side of the world they aren’t as prized I don’t think, but they are by me… with their funny little bittersweet combo, I love it when they hit the shops.
Anyway this recipe is typical of what I like, simple, easy, pretty much store-cupboard as long as you keep cream in your fridge, which I tend to do, and most importantly super easy but doesn’t seem as if it is. It’s good for your thighs too ;-)
I love a chocolate coffee combo and for this I used the delicious L’OR EspressO pods – I have to say that when making this dessert recipe using these pods it’s very easy, unwrap, pop one in (they have this special flow system that makes this coffee aroma really good), hit the button and the espresso bit of your dessert is done and dusted without any fuss. I just pop a jug where the espresso pours out instead of a cup.
3 Minute Chocolate & Coffee Ice-Cream Sundaes
60 ml espresso coffee
2 tbsp almonds
100g milk chocolate chopped
¼ cup double cream
8 scoops vanilla ice-cream
chocolate wafer biscuits
1. add espresso and cream to bowl and microwave for 1 min or until mixture is smooth
- 2. add chocolate stirring to mix and melt
- 3. layer ice cream and chocolate espresso sauce in a serving dish
- 4. top with almonds, shaved chocolate and wafer biscuits
These are really nice to serve when you have guests over, I’m not a big dessert maker but this is more a layering and arranging of ingredients that is always a winner, the coffee chocolate combo just seems somehow to hit the mark.
