20130917-01-easy-pea-soup-recipe-abeachcottage.com-gluten-free-healthy-simple-store-cupboard-ingredients Well helloooo lovelies, soup recipe here today, easy Pea Soup with Parmesan, might sound a bit different, but it’s very very nice the old pea and Parmesan soup recipe that I make – this combo I came across a bit by accident by adding Parmesan cheese to this pea soup when I had run out of cheddar one day…I never went back. You know by now I eat a lot of soups, rain, shine, Summer, Winter, hail or snow, I like myself a soup – easy, convenient, budget friendly, kid friendly, muffin-top friendly, healthy, full of veggies, good for the upper-arm situation, can be thrown together, I cannot think of many positives in the cooking world that it is not. 20130917-02-gluten-free-recipe-abeachcottage.com_

I make this all the time, mostly in my slow cooker / crock pot so I can chuck it in in the morning when all is calm in this crazy old white cottage…

…but one of the best things about it, apart from it being healthy and delicious is that if you have forgotten about dinner in the morning when you are still in your pjs and wondering how you will possibly get through the day, you can also throw it together in no time and no-one is any the wiser. 20130917-04-easy-crock-pot-soup-recipe-abeachcottage.com-pea-parmesan-souphealthy-store-cupboard-simple-slow-cooker

I could write a whole book on the benefits of having a bag of peas in the freezer, whether they are by the Captain of Birdseye or Mr Own Brand or not…there is something comforting about having these stashed in the back of that cold place women of other generations did not have the luck we have to rely on…and there is something almost sneaky about making a whole dinner dish with not a lot more than a green frozen packet pulled out when one is wondering yet again that daily conundrum of what quite one’s family will be having to eat.

Have bag of frozen peas.  Will go far in life.

Pea and Parmesan Soup Slow Cooker Crock Pot Recipe

1 cup white wine

3 cloves garlic

2 squeezes lemon

1.5 litres stock

1kg pack frozen peas

1 parmesan rind

2 large onions

for slow cooker :  throw all ingredients in slow cooker for 4 hours on high or on low all day

for stove top :  sweat onion and garlic for 5 minutes, add wine and let bubble for a min or so, add all other ingredients, simmer for 30 or so minutes or a few hours as above

remove Parmesan rind blend to smooth

Beach Cottage Pea Soup Recipe Notes :   * I keep Parmesan rinds in the freezer and throw them in – you might need more than one if you like it strong as do I    * chicken or veg stock is perfect  *if you haven’t got Parmesan stir through some grated cheese or top with grated cheese  *  a swirl of sour cream or cream goes down very very nicely  *ditto extra virgin as in olive oil *

Oh and just in case you have read through this and have thought to yourself how does this forty-is-the-new-thirty year old quite get away with feeding soup to the brood of carnivorous men in her life?

Well I’ll tell you the answer.

She pops a lot of bits and bobs on the top of the soup, slings bread to the side and tells them quite simple if they don’t like it, they can always have a go themselves.

And that is it from me my friends…an easy soup recipe in the slow cooker from a bag of frozen peas….

    Hi Sarah,

    Aah that’s dinner sorted, spied your recipe first thing this morning and thought yahoo that’s tonights dinner sorted. Now back home after the morning rush I’ve taken a closer look to check if anything is needed from the shops and only thing required is some more wine, so it’s all go for tonights dinner with some home made cheese straws. I’m so with re your comments about kiddo’s and dinner, my teenage boy has to cook one night a week and is now really enjoying it.

      not sure if this is too late, but you can lose the wine and it’s still delish or use sherry (I keep this all the time b/c it doesn’t go off and is a good wine sub) xxxx
