Beach Cottage Comfort Food Crock Pot Slow Cooker Friendly Chicken & Tomato Soup

Well hi Beach Cottage ladies, let’s do soup, chicken and tomato soup…a recipe for eyes-shut cooking, yah?
This is a simple, easy, everyday-is-a-comfort-day soup recipe…this one is crock pot / slow cooker friendly…most of them are in my book really actually, I just throw it in and mostly all works out well…with a soup and a slow cooker you have to be pretty wrong to get it wrong if you see what I mean.
So this is the soup we have a version of often on the weeks that we have chicken for Sunday Roast, normally on a Tuesday with stock made from the bones from the roast and the leftovers from the chickens (I always do two chickens and double roast potatoes so there’s enough for Monday and then some…and I really believe in the chicken soup penicillin thing especially through the Winter)
…the Beach Cottage Crew love this soup, I guess it’s become their comfort food, their mum’s got something nice in the slow cooker and I like that in life… I think it’s really really really important that kiddos have these childhood meals made with love, even if the ‘made’ bit means bunging it in the slow cooker and hoping for the best.
The best thing about this for me is that uses all parts of the chicken, but also, if you are not one to go making stock (and I so wasn’t before I started cooking two chickens every week – the stock now from two is on a whole other level) or do not have fresh herbs or even a fresh bulb of garlic in your life, it can easily be made by opening up cupboards, grabbing a few things that have been dried, preserved or packaged for you by someone else doing all the hard work.
And let’s talk about dried herbs shall we while we are talking labour saving and actually getting a dinner on the table every single night with a husband who cooks very very good scrambled eggs but that is about it…my view on the humble little packet of herbs??? I’m so for them – someone recently was telling me how putting a dried herb in her mouth (she is a foodie) was unforgiveable…really?! Far out, best you don’t pop over to my place for dinner then!
Over the years being at home with my kiddos and being chief cook and bottle washer, and wanting a home-cooked, not out of a packet for my meal (save Friday’s pizza and the odd take-away) for my family every single night, I’ll take any little thing, like a dried or frozen herb or garlic minced in a jar if it makes my life easier…hell yeah nearly all the time I have a shed load of fresh herbs growing outside, and hell yeah sometimes it’s just sometimes too much effort to go out there and pick those babies…
- 2 cups chicken (I used leftover roasted chicken)
- 1 litre chicken stock
- 1 bottle Passata (or 2 cans tomatoes)
- 1 large handful garden herbs (I used Parsley, Oregano, basil, chives, thyme & marjoram – or used mixed dried herbs)
- 3 cloves garlic
- 1 tbsp olive oil
- 2 onions
- 1 cup white wine
- 1 dash vinegar
- salt & pepper
- sweat onion & garlic in olive oil for 5 mins until soft
- add all other ingredients & simmer for a few hours
- serve with crusty French stick and top with cheese and extra herbs
As this cooks a lovely smell wafts around, it’s hearty, filling, pretty healthy I believe and most of all, as in every recipe that ever sticks around with me, there be no faffing and it’s suited to bunging it in and getting in the bath.
