Morning ladies, happy Monday, happy Easter and just checking in quickly to say G’day & share this week’s easy meal plan for Beach Cottage Meal Plan Monday…this will regularly go out on a Sunday but not on Easter Sunday ;-)

…we have woken up to a beautiful day here on the beaches, sunshine & blue skies at Easter is what I like to see and I am out and about today after spending yesterday doing not much but lazing about reading, drinking coffee, drinking, tea, doing a spot of gardening, drinking beer and making a curry..an Easter roast was planned but then the resident Beach Cottage Chef, that would be me, decided she’d rather laze and so the Beach Cottage Crew requested Chicken Korma…threw that in my crock pot and all were happy.



News here is that the Summer House is very nearly ready to be foofed…bring on some serious foofing, more on that soon…

This week’s meal plan may be subject to change, because, after all it is the school holidays and the chef might need some time off…the resident cleaner and laundry girl already took some time off, with chaos ensuing in Beach Cottage Land…you would have thought I would be used to that now…not.

Monday : { PICNIC }


 Tuesday : { Beach Cottage Crock Pot / Slow Cooker Forty Garlic Chicken }  recipe here


Wednesday : { with Leftovers Donna Hay‘s Chicken & Broad Bean Soup } recipe here (I will be cooking this for a lot longer than the recipe states & throwing rice in at end)


Thursday : { Crock Pot Slow Cooker Lasagne }


Friday : { Frittata with Peas, Mint & Ricotta } recipe here (this looks super easy & I like the sound of the mint in it..we’ll see)


Baking :

 { Pioneer Woman Cinnamon Rolls } recipe here  I have made these things often, warning these go STRAIGHT to your thighs… sugar, butter & loveliness overload

and there will be Beach Cottage Dump & Go Pudding the chocolate version to use up some of the copious amounts of chocolate floating around this old cottage, recipe here




This week’s new recipe is the Frittata, hope it goes well, I never seem to get my Frittata as tasty as some of the ones I have had whilst out…I am upping the herbs & seasoning to try and amend that…

    We’re picnicking beach style today too :)
    I’m a casual menu planner….I plan a fortnights worth of meals, cooking whatever takes my fancy that day. I also love trying new recipes and mixing things up. Being time poor most days, my slow cooker is a god-send as are super easy but tasty recipes.

    Crockpot Lasagna – that sounds rather genius! Ive never thought of using my slow cooker like that, not even sure I know how it would work…what happens to the lasagne top? hmm you’ve got me thinking now…thanks for the idea xx

    ps interesting, are you a natural list doodler? I am and it drives my staight thinking husband crazy that I embellish – they’re just scraps I tell him, not the important stuff … he doesnt get it…maybe its a girl thing? !!!

    Try sqeezing in 1/2 a lemon in your fritata towards the end of cooking time… I find the acidity tends to intensify flavours whenever I do it… I haven’t tried it it with a fritata recepie before(might actually try it tonight!) though so I don’t know how it will turn out…How bloody good is this weather?!We just came back from our picninc by the sea(did it yesterday too but the weather was not so nice) Did you get hail last night?! They were massive over my way! Your pudding had done a couple of rounds in this house…

    BUT I hate to say… it ain’t going to work in my home..~~

    Never sure who is going to be home…& if home at what time….

    so i just take it day by day…!!!~~

    I DO LITERALLY rely on phone calls through the day from hubby & son to inform me if they will be home or not….

    YEP..it is an awkward situation…

    But my hubbys work commitments often change from day to day…
    Mr C has a new job in a good accounting firm …
    so i embrace his LONG hours!!~

    Makes planning and cooking a tad tougher for my crew..~~
    (thank goodness eldest son lives in Brisbane!!~)…

    BUT HEY … my GUYS never starve!!~~

    So this is just the OTHER end of the spectrum where planning a menu does not work for me..!!~~

    BUT i am going to keep your lovely recipes on file for WHEN my they are ALL home in situ…together..!!~
